My Husband Ate Salad for Dinner!

Bret thinks that any entree without meat isn’t really a meal. And salads are sooooo far out of his meat and potatoes league. So the man who performs many colonoscopies weekly doesn’t necessarily get the fiber he should. (Yes, honey. I am telling on you!)

Anyhow, I took advantage of Bret yesterday. I knew that he wouldn’t have eaten all day–meaning he’d come home starving, ready to eat shoe leather if he had to. Thus I served him a salad and whole wheat rolls. Perhaps he was just trying to make me feel good after my crab bisque out of the can flop the night before, but he said he actually liked my salad. Here it is for anyone else who needs to fill a fiber void:

Rustic Spinach Salad
From Kraft’s Food and Family, Fall 2008

Rustic Spinach Salad

Makes:
4 servings, 2-1/4 cups each

What You Need:
8 cups baby spinach leaves
2 small apples, thinly sliced, cut in half
2 cups chopped cooked chicken breasts
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
1/4 cup PLANTERS Lightly Salted NUT•rition™ Heart Healthy Mix
1/2 cup KRAFT Light House Italian Dressing                                                                         ******(I used a raspberry vinaigrette instead)

Make It
TOSS all ingredients in large bowl just before serving.
Voila!  Headline:  Husband Eats Salad and Lives!
